Once I had made the decision to purchase a quality Japanese knife, it quickly became apparent I was going to need to learn how to properly sharpen it, so I signed up for a sharpening class with Leigh at Chefs Armoury in Rosebery. He is a great communicator and passionate about what he is doing, and I really learned a great deal during the enjoyable hands-on session. I sharpened a couple of my old kitchen knives under his instruction, and achieved an edge on them which I had not previously thought possible. He also advised me about which sharpening stones to buy so that I could confidently look after all my blades at home. A most informative session, and given the opportunity to learn this important skill from a true expert, I reckon this class was great value in every sense.
