The "Regular" version (green packaging) can also be used to wrap proteins for freezing (along with cling wrap or plastic bag) to prevent freezer burn. The food can be defrosted in the fridge to prevent loss of flavour.
Can also be used overnight to dry proteins for nimono or grilling.
Size of the sheets are 180mm x 250mm. There are 36 sheets in the packet.
Japanese Dehydration Sheets
Pichit dehydration sheets are a Japanese chef's best kept secret. They allow dehydration of foods without the use of salt to condense Umami and firm the flesh of proteins.
In the case of seafood it helps eliminate strong fishy odours.
The same produce will taste even better than before.
Dehydration of meat or poultry allows for marinades to penetrate deeper and in the case of crudo/carpaccio, seasonings will absorb better.
To use pat dry the meat/chicken/duck/seafood and wrap tightly in the dehydration sheet and place in the fridge for the desired time. Either side can be used.
Pichit works via osmosis. The outside is a semipermeable membrane wrapped around starch syrup and kombu extract that attracts moisture.

- Store away from humidity in a tightly sealed bag
- Note - not as effective on fatty foods - high marble wagyu, fatty tuna; or presalted foods.
