Moriguchi Solare Series
Elegant blades made from White #1 carbon steel wrapped in stainless steel for everyday use. White # 1 steel is normally reserved for high end sashimi knives so we are excited to offer the steel of purists in an all round blade. All white carbon steels are more reactive than blue so the stainless cladding makes it easier to keep this knife rust free as you will only need to look after the exposed core at the cutting edge.
These are designed as workhorse knives that are still thin enough for precise cutting.
We love the Japanese Rosewood round handles which are quite rare with most knifemakers attaching octagon handles nowadays.
The exposed edge on these blades will patina (change colour) which is natural for carbon steel however this is only surface deep and can mostly be removed with our rust clean products.
Please note:
- The core material is made from carbon steel so care should be taken to keep the edge dry after use to prevent rust.
- Apply a thin coat of Camellia oil to the carbon edge before storage to protect from moisture.
- As the handle is natural wood, colour and grain may vary from the photo.
