The second step in the sharpening process is with nakato or middle stone. We highly recommend this 1000 grit sharpening stone due to its fast cutting and durability.
Naniwa Diamond PRO Series
The Naniwa Diamond PRO stones have next level cutting abilities and a designed to please even the fussiest sharpener. These are the most advanced sharpening stones from Naniwa to date. They are fast (even faster than Chocera PRO), durable, easy to use and can be used on even the hardest of knife steels. No soaking is required, just a splash of water and start sharpening.
These stones are useful for sharpening knives or chisels with super flat bevels as the stone remains very flat for a long time. Also good to use on knives with a mirror finish as there is little to no swarf (slurry) to scratch the side of the blade.
They are made by bonding a few mm of tightly packed diamonds to a sturdy aluminium base. The sizing of the grit is the most consistent we have seen on any stones, so the end result is an extremely even scratch pattern on the edge.
Over time these stones can get a very slight dishing out. Best way to true the stone is with a very high-quality sandpaper bonded to a flat surface – however it might take a while and a few sheets of paper. You will find that these stones tend to glaze over especially with softer steels (or Jigane). The best way to deglaze them is with a nagura (we use a mikawa shiro nagura). There is also a small deglazing stone in the box for removing material more aggressively.
Eventually you will wear through the diamond, generally starting with a small patch so it is better to try and use the entire stone as evenly as possible. Please be aware these stones are unsuitable to use as a flattening stone.
