Twice Brewed Shoyu
Traditionally brewed soy sauce is made from soybeans, roasted wheat, koji with the addition of a brine solution made from water and sea salt. With twice brewed soy sauce (known as Saishikomi Shoyu) the brine solution is replaced with already brewed shoyu to create a soy sauce with a higher concentration of umami rich amino acids without being too salty. This shoyu displays an elegant aroma and a smooth palate. Excellent to dip everything from drilled meats to raw fish.
